Mash Direct Recipe with Beetroot

BBC Good Food highlights that athletes drink beetroot juice to support their endurance and improve their performance. It’s also a good post-workout food option, since its nitrate content can aid in muscle recovery.
To create this recipe**, you’ll need:
Main dish:
- 2 packs of Mash Direct Chilli Baby Bakes
- 1 pack of Mash Direct Red Cabbage & Beetroot
- 400g ham
- 100g peas
- 100g scallions, chopped
- 4 eggs
Cheese sauce:
- 570ml milk
- 25g plain flour
- 50g butter
- 1 tbsp Dijon mustard
- 75g grated cheddar
- 40g grated parmesan cheese
Instructions:
- Preheat the oven and cook the Chilli Baby Bakes.
- Prepare the cheese sauce by heating the milk in a saucepan. Add the flour, butter, and mustard before bringing it to a simmer. Whisk until it’s thick and glossy. Season with salt and pepper.
- Turn the heat down to the lowest setting, then cook for five minutes. Stir in the cheddar and parmesan. Set it aside.
- Poach the eggs, then set them aside.
- Put the Chilli Baby Bakes into a bowl. Put the cheese sauce, ham, peas, and scallions. Mix well.
- Cook the Red Cabbage & Beetroot. Serve the vegetables and the poached eggs on top of the Chilli Baby Bakes.
