Tumeric Chicken with Mash Direct Carrots and Parsnips

Whether you’re training for the 8 Mile Walk or the full marathon distance, you’ll need sufficient energy to function at your best. The British Nutrition Foundation* points out that energy can be obtained from carbohydrates, proteins, and fats. Though it can be tempting to consume high-fat food, the Foundation warns that these energy boosters will only pull you further from your nutritional goals.

Turmeric Chicken

Though chicken meals typically take a while to make, you can further simplify this recipe with an instant rice cooker. For this recipe, you’ll need: 

Main dish:

  • 2 tbsp vegetable oil
  • 1 kg boneless chicken breast
  • 75ml chicken broth
  • Mash Direct’s Carrots and Parsnips
  • 1 medium sweet potato, chopped into 2-inch pieces

 Turmeric Sauce:

  • 1 can coconut milk
  • 3 tbsp cider vinegar
  • 1 ½ tsp ground turmeric
  • 1 tsp ground ginger
  • ½ tsp paprika
  • 1 tsp sea salt 

Instructions:

  1. Add the vegetables into the rice cooker before switching on the synchro-cooking function and heating for one minute.
  2. Season the chicken with salt and pepper before placing it in the rice cooker. Let it cook for six minutes before flipping it over to the other side and cooking for another six minutes.
  3. Once the chicken is cooked, add the broth.
  4. Blend all the ingredients for the sauce and pour it into the rice cooker.
  5. Place all the vegetables on top of the chicken then close the lid. Press the pressure cook function and wait for twenty minutes before serving.
